Iced Green Tea with Mint & Ginger – A Refreshing, Floral Brew

This iced green tea is a crisp, cooling infusion that highlights the pure, refreshing qualities of high-altitude loose-leaf green tea. Infused with fresh ginger, mint, and a touch of honey, it’s a clean and aromatic drink—ideal for warm afternoons, shared meals, and quiet moments of focus.

 

Tea Selection Matters

We use High Mountain green tea, a Camellia Sinensis cultivar handpicked from the season’s first flush at 400m in Yellow Mountain, Anhui, China. Its dry leaves are a soft sage green, steeping into a delicate wheat-colored tea. The resulting brew is fresh and floral, with crisp green vegetable notes and a hint of sweetness.

When cold brewed, High Mountain green tea becomes even more cooling, accentuating its lightness and clarity. For those who prefer a more structured green tea, Misty Peak—with its chestnut and hay-like qualities—adds an earthy complexity to iced preparations.

 

Ingredients

  • 6 cups water
  • ¼ cup fresh ginger, peeled and sliced
  • 2 tbsp loose-leaf High Mountain green tea (or Misty Peak for a bolder profile)
  • ½ cup fresh mint leaves (plus extra for serving)
  • ⅓ cup honey
  • 1 lemon, divided

How to Brew Iced Green Tea with Mint & Ginger

Infuse the Base

  • In a medium pot, bring water to a gentle simmer. Add sliced ginger and remove from heat.

Steep the Tea

  • Add High Mountain green tea and mint leaves. Cover and steep for 10 minutes (for a delicate, floral brew) or up to 15 minutes (for a deeper infusion).

Strain & Sweeten

  • Strain out the tea leaves, ginger, and mint. Stir in honey and juice from half a lemon.

Cool & Serve

  • Let the tea cool to room temperature, then transfer to the fridge. Serve over ice with fresh mint sprigs and lemon slices.
